Here's a healthy and delicious salad recipe that's perfect for a light lunch or a side dish:

 Quinoa and Chickpea Salad


 Ingredients:


- 1 cup quinoa
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 avocado, diced
- 1/4 cup feta cheese, crumbled (optional)

 Dressing:


- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste

 Instructions:


1. Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes, or until the water is absorbed. Fluff with a fork and let cool.

2. Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, salt, and pepper.

3. Assemble the Salad: In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint. Pour the dressing over the salad and toss to combine.

4. Add the Final Touches: Gently fold in the diced avocado and feta cheese (if using).

5. Serve and Enjoy: Serve immediately or refrigerate for an hour to let the flavors meld together.
